SV Scallop Risotto

I always thought that I did a good job cooking scallops, but these scallops where by far the best I have cooked.  I did them for 30 minutes at 113, then patted dry and cooked them on the CI for 2 minutes, flipped and 1 more minute.  These were cooked perfectly and very good.  My wife made some parmesan risotto that we had the scallops with and she made some brown butter to put over the top.  Also, had a side of garlic/spinach.  Made for a very good meal.
