Leftover Pork cheesy rice

I had plenty of left over pulled pork that needed used and wanted something quick and easy for our supper. Using what I had on hand I mixed this casserole up.

2 cups leftover pork, chopped
1 box of Zatarain’s yellow rice, cooked and chilled
1 can cream of celery soup, Campbells
1 can cheddar cheese soup, Campbells
Some diced celery and onion sautéed in butter
1/3 to ½ cup sour cream
1 to ½ cups shredded cheddar cheese

Mix the first six ingredients together well. Place in a casserole dish, oiled, and cover with the shredded cheddar. Bake until cheese is melted and bubbly, about 45 minutes at 325 to 350 deg.

I saved out a small bowl of this for my grandson. I had to get him fed before his dad came to pick him up at 5:00 for ball practice. He likes most rice dishes. My wife and I would eat at 6:00

I still don’t have my indoor oven fixed so I used my outdoor oven, the Traeger. I usually don’t use it just for casseroles since you don’t get any real smoke taste.

I did it at 325 deg. grill level temp. for about 50 minutes. I added some crusty take home and bake rolls; I had split and topped with garlic spread and butter for the last 15 minutes. Butter side up then flipped half way through.

We had this with a side of salad. Pretty good for quick and easy.
