I did this cook a few months back for my wife and me on our 40th anniversary.  I bought a choice rib roast at Costco and wet aged another ten days.  Rubbed down with OO and seasoned with garlic salt and pepper.



Into the Bradley @ 200* until IT was 122*, removed, FTC 1 1/2 hrs. until dinner time.



Removed from foil and placed into a cast iron skillet in a pre-heated (500* ) oven to sear 4 min each side.



After the sear to both sides, removed and sliced.



Plated with my garlic mashed potatoes and a Caesar salad made with my home-made dressing, and of course a glass of good wine, a Cabernet 2008.



This was a delicious meal that went well with a great evening.

Old Hickory that is one great looking roast! It almost looks like a Tri-tip! That thing has the same shape ;)

Congrats in the anniversary too. You have been married longer than I have been alive. That is quite an accomplishment!
