First cook in a MES

So my wife and son gave me a 40 inch Masterbuilt Digital Electric Smoker for Father's day but I have not been able to use because it keeps raining  :'(, but today is the day  ;D, so I decided to try some spareribs for my first cook and I am doing the 3-2-1 method.  I started with a rack of spares, pulled off the membrane, cut off the section of boneless meat and cut the rack in half.  Started with a layer of brown sugar, then a layer of Lawry's sweet basil, citrus and garlic rub.  I usually make my own rub, but just used this today as I was in a little bit of a hurry.  I put the ribs in the MES at 225 degrees and smoked for 3 hours.  I used mesquite wood chips because all my other woods were chunks and too large to fit in this smokers loading tube. 


This pic is after 3 hours of smoke, I then put some butter, honey and brown sugar on them, wrapped in heavy foil and put back in.  I will update on how they turn out.

LOOKS GREAT!  Sparko, you're going to love that MES, I got mine two years ago and it has never let me down. It was (and is) my very first smoker and I am still learning and have a lot to learn (which the gang here has been very, very helpful with.) Keep us posted on the maiden voyage of this great ride.

Love the pullback on dem bones. I like the see through door on that MES. It looks like it is wide enough so you don't have to cut your ribs in half.....

Hey Sparko, We got ours right after Thanksgiving last year...in fact, ordered it the day after...

I haven't had ribs come out lookin' like those...mighty good-lookin' ribs.

The last time I used it was when we had the June Gathering here.  Dee made me use it to cook some ribs while he was here.

I'll be watchin' to see how these ribs turn out.  Just wish I could be there for the taste test.

I ended up doing more of a 3-1-1 cook.  I smoked for 3 hours, 1 hour wrapped and 1 hour unwrapped.  I was afraid they were getting overdone.  They were finished about an hour or so before my guests arrived so I just wrapped and let them sit until dinner time.  then I put them on the RED to heat them up and carmalize the ribs.  I basted them with John Boy and Billy grilling sauce as they warmed up on the grill.  They came out pretty good.  Had a great bark and good flavor.  Everybody seemed to love them.  I also served up some grilled chicken I had marinated in my own Mexican marinade (recipe available upon request) and I made my Italiano summer pasta salad and my wife made her smashed red potato salad.  All and all a great summer meal.

B T W, when I want to clean the door, I take it completely off...very easy to do - and makes cleanup easier too.
