So my wife and son gave me a 40 inch Masterbuilt Digital Electric Smoker for Father's day but I have not been able to use because it keeps raining :'(, but today is the day
, so I decided to try some spareribs for my first cook and I am doing the 3-2-1 method. I started with a rack of spares, pulled off the membrane, cut off the section of boneless meat and cut the rack in half. Started with a layer of brown sugar, then a layer of Lawry's sweet basil, citrus and garlic rub. I usually make my own rub, but just used this today as I was in a little bit of a hurry. I put the ribs in the MES at 225 degrees and smoked for 3 hours. I used mesquite wood chips because all my other woods were chunks and too large to fit in this smokers loading tube.
This pic is after 3 hours of smoke, I then put some butter, honey and brown sugar on them, wrapped in heavy foil and put back in. I will update on how they turn out.
