Hey everyone.  Happy to be a newbie to the board.  I have been lurking around and enjoying all of the great recipes, tips, and stories from you all.  I have been an avid/albeit amatuer smoker/bbq'r for quite awhile now.  There is nothing better than throwing meat on the grill.  I recently purchashed a Pit Barrell Cooker and it should be delivered to my doorstep on Friday the 13th.  I hope that is not a bad omen!  While researching new smoker and in particular the Pit Barrel, I stumbled upon this website, and well, I love it.  Glad to be a new member, and look forward to learning a whole lot more from all of you "experts"!
  I should mention, I love all types of BBQ, but my favorite is North Carolina style.  It's not real popular here in the Mid-West, and you can't order it anywhere here.  So I do it all myself.  Any tips in particular to this area would be greatly appreciative!

Hi Nano and welcome from NW Ohio..where you located? I add sauces on the side..BBQ sasuce doesn't like me after a surgery. I did like the Carolina style sauce too..with zing. Olde Da e makes the best sauce I ever tasted and I can eat his.  go figure.  Pam .☆´¯`•.¸¸. ི♥ྀ

I can't help you a lot with Carolina style BBQ because I'm a transplanted southwesterner and still do most of my cooking in that style.  I do have a recipe or two for vinegar based sauce.  See the PBC section for info on how to do a pork butt (that's all true "Carolinians" eat).
