Hello from Old Bridge, NJ
« Reply #-1 on: November 01, 2013, 11:11:45 PM »
I stumbled across your forum while searching for info regarding rosemary apricot pellets.  I found some great info, and I decided to join.
I consider myself a BBQ hobbyist, with a love for low and slow cooking.
I'm been Qing on a WSM for about 10 years, and had a lot of fun.  Well, tending the fire at 4 am not fun anymore. I switched to a Rec Tec smoker, and I haven't looked back.  I am loving my new rig.  I mostly smoke ribs, and pork butts.  I make my own rubs, and BBQ sauces.  Well I used to make my own sauces, till I found a restaurant in Little Rock, AK that makes some incredible sauces.
I believe there are many ways to make great que. If you have a crowd of happy people around your dinner table, then you are doing it right.

Looking forward to exploring deeper into this site.

Cheers,
Scott

Thank you all.

I plan on visiting the forums, and ready through some of the great stories/questions/journals.
I will post my Rec Tec experiences.  I have some photos of ribs, brisket, and my first whole pig.  Yes, you can smoke a pig in a Rec Tec.

My rub is a closely guarded secret, but I am always willing to help anyone build their own.
There are some great ones on the web.  Look at the ratio of ingredients, and play around to you find what you like.

Look for a basic rub of brown and white sugar, salt, paprika, granulated garlic, onion powder, mustard powder, black pepper, and cayenne pepper(about 1 to 2 tsp to 2 cups of rub).
This is your base
Then experiment with other seasonings like:
Cumin
Old Bay
Oregano
Celery Salt
Espresso beans
Dark chocolate or cocoa

Have a great weekend.
Cheers,
Scott
