no problem at all mike. ummm..... smoke for 2 hours then cook at 240° for the ride. only wrapped at the end w/ no fluid added. our pizza maker deb told me that she likes to smoke at 240°. been doing it that way for along time. cook chuckies, briskets and butts the same way. smoke > 240°.
