pz, this sounds excellent! How do you make them?
I haven't made them myself, but a colleague gave his recipe to my wife, who just tried making them the other day - looks really simple. The pickling takes the harsh bite out of the garlic, and makes them quite flavorful.
Spicy hot garlic- 5 cups vinegar
- Three-quarter cup sugar
- 2 teaspoons hot chili flakes
- 2 teaspoons mustard seed
- 2 teaspoons dill weed
- 8 cups garlic
Cosco has bags of garlic. Cut off attachment end and anything imperfections
In a large pan combine ingredients boil over high heat
Add garlic return to boil
Simmer uncovered two minutes
Pour into jar with the jars hot the lids hot and hot rings
pack with garlic
Put lids and hot rings on jars snugly. As they cool the lid will pop and they are sealed
