First time - St Louis Ribs

Hey guys,

Just got my PBC and I'm trying some ribs...  Kind of new to smoking, got a cheap water smoker from Sears last year and did some baby backs.  They turned out nice, but keeping that thing on temp was a pain.  Hope the PBC will be easier to work with..

It was stable for a while a 239, now it's holding 251.  I used kings ford blue bag and four chunks of applewood.

Any guess on how long? I'm thinking 4 1/2 to 5 hours.....

Not that long at 250.  Probably closer to 4 hours.

They turned out GREAT !!!!, Pulled them at about 3 hours and 45 minutes, put a little sauce on and back on the PBC for another 15 minutes.
