Memorial Day Baby Backs on the Traeger

I've been experimenting with ribs, around the 3-2-1 recipe. This time, I smoked them at SMOKE (120ish) for 4.5 hours, then wrapped them with honey and brown sugar, a coating of rub for 2 hours at 225, then back down to SMOKE for the last hour unwrapped on the grill. I think they turned out really good, pulled off the bone with just a light tug. I love working on this, and constantly find myself wanting to smoke stuff. I might be addicted.

I went four and a half hours on the first part, knowing that the wood pellet smokers don't really impart a ton of smoke into the meat at 3 hours, and I thought maybe a little longer at the low temp would help. It worked, I think.

Great ribs jd!!! If you like smoke get you an amazin tube smoker it will give you some extra smoke in less time. I use one in my Traeger when I want extra smoke. Don
