Great job with your first cooks on your PBC!

With chicken I like to go the last five minutes with the lid off to crisp up the skin a bit. Just keep your eyes on it during this time ;)

I had heard about that somewhere and was thinking I might give that a go. Thanks for the reminder.

Thanks. Had a dinner party for 12 yesterday and again did chicken and ribs (this time St. Louis style). Everyone loved the food and stuffed themselves pretty well. Got about 20 minutes of light, but steady rain an hour or so into the cook. Cooled the fire down a bit so I cracked the lid for a few minutes and that got it going pretty good.

Anyone else have experience with the PBC during rain? Have you ever had to bring the food on and finish in the oven? And has the rain made its way into the smoker through the rebar holes or bottom vent.?  Just curious.
