So I installed the unknown BBQ hinge on Big Worm. Fantastic thingy.
Decided to try hanging ribs. Came out pretty good, cooked faster than laying them flat. Used my craycort cast iron grate as a hanger.

I'm thinking hanging meat is the way to go.
Had plans to PBC some chicken but had enough heat leftover so.....
Used the snake for the ribs, average temp was 235. Cooked a lot faster than laying them flat. Cranked the heat up to 329 for the chicken. I don't think I'll cook ribs flat on the grate. Hanging is the way to go.
