Title: Left Over Mo' Rockin' Chicken-Blue Cheese Sandwich

The chicken thighs were massaged with mayo and then doused in Mo' Rockin'. After dinner with our youngest, the two thighs that were left went on a couple bolillos tonight, that were drizzled with evoo, a few slices of tomato, and a slice off a hunk of blue cheese. Into the broiler! Served with a side of red beans and rice. Oh yeah! Quick, easy, lots of flavor....a great Monday night meal!

Yep that is some scrumptious delicious looking vittles. :thumbup:
Never tried Mayo massaged Chicken but based on the looks of this cook I have to give it a shot.

Speaking of mayo, I tried a recipe from Helmans that obviously would call for the use of their product...in burgers.  Mixed mayo in when making the patties.  It had a real juicy Dairy Queen kinda taste going on.  Very delicate handling required to keep them from falling apart.
