Title: Arctic Barn Buzzards
Post by: squirtthecat on February 11, 2012, 12:05:01 PM
3 mostly frozen BI turkey breasts, and the windchill is right around 1°.   :o

They are already pumped/brined with a bunch of goo, so I went with a salt free Cajun rub I got from a displaced coonass.
(d@mn good stuff BTW..)

Running at 225° right now, and I'll bump it to 250° in an hour or so.    Should take about 6+ hours to finish.

Interesting squirt....

So - how about some additional info on the benefit and differences in cooking the mostly frozen meat squirt. Would make a nice tutorial if you want ot do that in a separate thread......?

Thanks

No magic behind it...   They sat in my cambro all night, and weren't thawed out in time.

So I put them in sinks full of water for a couple hours, until I could pry the 'gravy' packets out of the cavities.   ;D

Sorry for the ginormous pictures, I scaled them down a notch.

The pics are great - no worries there!

What I should have said is: Squirt - tell us about your experience with cooking frozen/semi-frozen meats. Most folks out there may believe that it is necessary to completely thaw first. If not, why? Ant advantage? Dis-advantage? Remember, we have some folks that are newer to cooking than you and they are curious to learn.
Thanks,
T

I think it would make for a longer cook and I am guessing the meat might take on more smoke flavor...........

The wind is wreaking havoc with my drip bucket...  (the 'drips' are blowing past it into the gravel)

So I rigged up a wind block.

Which worked for exactly 3 minutes until it blew over.

So I grabbed Deb's old Traeger lid.  Wa la!

We'll check back later.   Going out for pizza now.   ;D

5 hours later...   We get home from Church and they are done.   All are North of 165°.  :o

Yank them out quickly.

The big one is for a buddy of mine, so it is in the Cambro with a semi-frozen pork but to cool down.    One more is in the microwave, and the third is in an alternative FTC.   ::)

I'll slice the breast meat off of ours after they cool down.   The biggie will get a few yards of Saran wrap, then into a 2 gallon freezer bag.

I was up in your neck of the woods this time last year working for a client.  It was 7 degrees the morning I left, with wind hanging around 20 MPH as I drove to Peoria.  I haven't been that cold since.   You should get a special medal for even going out of the house, catsquirter!
