This is a 20 ounce Cornish Game hen. I spatchcocked it and marinated it for 6 hours in this mixture:
3 Tbl - Way Out West (WOW)
1 Tbl - M3
¼ cup - EVOO
3 Tbl - Apple Cider Vinegar
1 Tsp – Crushed red pepper flakes <---(“borrowed this one from Hikerman”)
I removed it from the marinade and gave it another shot of WOW.

I have some sweet peppers stuffed with cream cheese waiting to go onto the smoker.

The hen was put onto the Grid Iron at 160 degrees, using a mixture of apple and cherry pellets. I will leave it in smoke mode
for 30 minutes then kick it up to 325 to finish.

Game hen is done! I am going to rest it for about 10 minutes while the peppers cook.

Awesome game hen! The flavors were perfect. My wife is at our son’s house in Florida and she definitely missed a delicious dinner.
I saved the other half and some peppers for tomorrow's lunch.
