The beef on the stick was a Brazilian type of cook Albert did.  Hopefully, he'll come on and explain it all but this is what I remember.

He took a fat cap which is a boneless sirloin and cut it into four steaks with the grain.  The bent each into a "C" and threaded on a skewer that goes into the rotessarie.  Flavored it with rock salt only.  Then would cook it on the rotessarie on the grill.  When it was done on the outside he would shave off about a quarter inch thick slice off each piece and then put it back on the grill to cook the outside crisp again.  This was great and would be good for a large group.
