Eye Round Jerky

Jerky stash is getting low so thought I better stock up. Sliced up 10# of eye round roast, let it soak overnight in a quart of Smoking Gun marinade with 2 t cure 1 and 1 t cayenne for some extra kick. Into the dehydrator this morning. Pics to follow!

Turned out really good
Found out that next time I'll probably start with 15 lbs of roast, this 10 lb batch fit comfortably on 7 of the 12 racks in my 80L Cabela's dehydrator. If I have to clean the slicer and dehydrator after using them anyway may as well use the full capacity. 10 lbs raw weight of beef yielded 4 3/4 lbs of jerky. About a pound of which went on a pontoon ride at a friend's lake cabin and sadly did not survive. ;)
