Leave it to my go-to-guy Kenji @ Serious Eats to find the BEST way to sear steaks. A recent article and video show the adventure with science guru Ed Savage. Very entertaining and as usual thought provoking! All steaks were cooked prior to searing via sous vide. High high heat is not the best for searing a steak and the results show that most of us already have the best steak searer in our arsenal!
