What about a meat grinder with a fine plate?
Might be interesting to see.

I'm wanting to make tubes of dough to stuff, a grinding plate would just mix it into bits..       I need a Play-Do toy! :D :D :D

Look on ebay for a regular pasta maker - $25 or less.  Then you can roll the dough out very uniformly, roll strips around tubes, cut & bake them, then stuff.

I already have a pasta maker and am looking into making lower carb ravioli, etc. since I found the Carbalose flour.

I have a pasta maker, just wondering if I could find one that would make penne style.

I make my pasta dough..any way you want to, I use read machine or KitchenAid or food processor..then roll it out, not too thin..then cut string chees, I cut it in half.. put it around dough and then roll it up..they come out straight or cut them in smaller slices so you can make rounds. dip them in baking soda water then bake them.  .☆´¯`•.¸¸. ི♥ྀ.

We picked up a Marcato pasta maker a few years ago at a garage sale and it's amazing. We can literally make any type of rolled/shaped pasta on it. I see them fairly frequently in second-hand stores.

I haven't seen one that makes rolled pasta but I did see the Atlas 150 that makes sheet pasta for noodles or lasagna.

What about a meat grinder with one of those kubbe attachments?  Video should cue up at the point where its demonstrated. I'm not sure how well a bagel type of dough would work, but I bet a good stiff cornbread batter or other very dry batter could be made to work.  I've seen some low carb batters that were very stiff. Then just stuff with meat and pinch the ends closed and deep or air fry!!!

Here is a new Popeil Pasta maker.  Sort of pricey but listed as new.  Maybe the Manicotti die would work?  Also shows Penne and Rigatoni.
