Seasonings:
1tbs bl pepper
1tbsgarlic salt
1tsp smoked paprika
1/2tsp onion powder
1tbs fresh rosemary finely chopped
1tbs fresh paprika finely chopped 1/3 C OO
Mix into a paste and liberally rub into a 5.1# standing rib roast I had purchased @ Costco on the 15th and aged in a 36* fridge for the additional 10 days.
Then into the Bradley @210* until IT is 120*, remove and FTC until almost time for dinner. Remove from foil and place into a preheated iron skillet and 500* oven for 8 min. and remove for carving.
My Wife has the table set.
Time to eat, --with baked potatoe and corn casserole, and a glass of good wine.
It was rare, the way we like it, juicy and tender.
