BMerrill (Billy) and I are cooking this weekend as Holy Smoke NC and the competition is going to be fierce with 93 teams signed up!  Billy is doing the "long cook" -- brisket and butt -- and I'm doing the "short" -- chicken and ribs.  Lots of meat prep and list checking today.  Got the cooker loaded.  Will give a report Sunday some time . . . KCBS site will have the high-level results late Saturday evening.

I'm doing the chicken and ribs on the Memphis.  Billy generally uses his super-modified Traeger Texas.  I'm using Chris' Perfect Mix pellets.  Don't know what kind of pellets Billy will be using.  I keep mine in a kitty-litter bucket which should draw some interesting comments from the civilians.
