Freezing Corn
« Reply #-1 on: August 18, 2013, 10:24:56 AM »
Sweet corn season here in Ohio only lasts about two months so for a long time I have cut it from the cob and frozen for winter use, 10X better than from the store. I have 12 lbs. frozen for this winter, and here is my way to freeze and vacuum seal.

Fill a plastic ziplock sandwich bag with 1 lb. of corn.
Stand it up and fold over to remove as much air as you can and seal.
Lay it flat and spread it out and then in the freezer overnight
Next day cut off the ziplock end and vacuum seal
This makes nice flat bags to store and will keep without freezer burn

The corn out here is California is not worth freezing most of the time. There are some local growers in the valley that have good corn but the stuff at the stores just plain sucks :'(

Thanks for the info Don!

Do you cook, strip and then freeze? Or do you stip then freeze and cook when using? Also, has anyone frozen "raw" corn still on the cob.
Why couldn't Noah have swatted the 2 mosquitoes?.

Gus I always shuck and clean off the silk, par boil the corn for 5 minutes then cool down in ice water, cut off the cob and scrape the cobs to get all the goodies, then bag up and freeze. The last 3 lbs. I did up I steamed the corn for 7 minutes. I found the best silk remover is a stiff bristled veggie brush. I am not real picky about the silk, it's eatable! Don
