I've always thought the PBC design is far less suitable for grilling than smoking due to the significant distance (18"?) between the coal basket and the grate, so I tried a new idea for grilling a few steaks today. I stacked a few bricks in the bottom and then used by my charcoal chimney as the heat source since it's able to produce very high heat in a concentrated area which is ideal for steaks. The only drawback is that if you're cooking a very large steak like the one pictured, it's more difficult to get it evenly cooked throughout. Regardless, this technique proved to have good potential so I'm sure I'll be trying it again.

Where there's a will there is a way. I have cooked with a grate sitting directly on top of a chimney starter. Better than wasting fuel, and no soot like when doing a caveman style cook.

Watched a guy do Cowboy Rib Eyes directly on lump charcoal
Just shake the ash off and put the beef right on the coals
I think the idea came from Alton Brown
May be another idea for PBC using lump in the charcoal basket

Where there's a will there is a way. I have cooked with a grate sitting directly on top of a chimney starter. Better than wasting fuel, and no soot like when doing a caveman style cook.
Actually that was my first thought, but then I realized this would be easier since I don't have to worry about balancing a wide grate on top of a narrow chimney.

The charcoal grate from an 18" Weber (13.5" grate) fits nicely on top of the full size Weber chimney. Plus, you use the chimney to light the coal and can get them and the grate white hot in no time hot before putting the meat on.

If you are looking for bigger surface area why not use the same brick set up and place the PBC charcoal basket on the bricks. That way you raise up the coals and can cook bigger and/or multiple steaks.

Hi Pong, The PBC will cook an awesome steak! Here is proof, these were cooked about 7.5 minutes on each side and were awesome, there is no need for modifications as you will grill with the lid off. Enjoy! PBC Co. - Amber

Those are some great looking ribeyes done in the PBC, now I got a taste for some ribeyes soon. ;)

That's actually not a bad idea. I may try that as well.
