Title: Pulled pork and baby back ribs

I haven't been able to grill  or smoke for quite some time due to the rains and being so busy over the holidays.  Had no plans for today and the forecast was for sunny skies so figured i would fire up the PBC.
I got an 8.3 lb butt and 3 racks of ribs.
Starting the butt 1st.  Dry brined it yesterday and this morning coated with some Memphis Dust.

Filled my coal basket and put some in a chimney which iet got for 15 min then dumped into the PBC.

Im never sure how long to let it go before putting the meat in.  Today i went 10 min.  Before putting the butt in.
This is the 1st time im going to put to on the grate and not hang it.  We shall see.

In a few hours i will rub the ribs with some BD's and some with MD and hang them.

Will check in later.  Or tomorrow.

Interesting to me when one, like you, combines cooks. :)

Same question how do you like the Smoke unit?  I love my Thermapens and recently had a Time Stick Trio not work properly, it was still under the 2 years and they replaced it with no questions at all, fantastic company that they are!  I have heard nothing but positive reviews for the Smoke unit.  Just about to get one myself.

I dont have much to compare the Smoke to as this is the 1st thermometer of this kind I have owned.  So far  so good on the however.  Very solid feeling unit, easy to set and read.
Im a big fan of Thermoworks products and must have 3 or 4 other thermometers  with them  with almost no complaints!!

Only issue I have had with it was when using on my Weber with a Slow and Sear (my 1st and only time) the temp kept swinging up and down and the alarms kept going off, so had to go fix the temp turn off the alarm and then track down the receiver and also turn it off.  Got to be a bit maddening but that was  just the Smoking doing what its supposed to   LOL

Sorry i never posted the results of tgis cook.   I know everybody requires pocs for "proof " and it was getting late and we were hungry and the pics where missed.

The butt pulled like buddah' and was pretty tasty it didnt have the best bark however.  I did wrap it at 165 to make sure it would be done in time.  Next one i hope to cook it on the grate w/o wrapping.

Ribs were also quite tender and tasty.

Heres a pic or two of some leftovers  the following  day
