My local butcher shop had plate ribs for a fairly decent price (possibly because they weren't super thick?) so i decided to throw some on the PBC. I typically do them in my stick burner. I did them Texas style with just salt and pepper and a little mesquite. They came out pretty great. Sorry that some of the pics aren't the best this time around. I had bad light.

Looks great. How long were they in the PBC for, and did you hit a target temp with them?

They were on for about 4 hours. I don't temp them I cook them until they reach the tenderness level I'm looking for.
