I made 10 lbs of keilbasa last weekend. Making the periogies and Halushki on Friday. Maybe a ham too. Not sure just yet.

I won a couple of turkey breasts (bone in) at a meat raffle - going in my PBC this weekend. Will be adding a ham as well.

Easter is my Wife's birthday this year, so I'm taking her out to dinner instead of cooking.  I know, who wouldn't want smoked meat on their birthday/Easter instead of going to a restaurant?   ::)  Pork butt and macaroni salad are planned for next weekend (need to use up the leftover Easter eggs and no better way IMO than macaroni salad), so I'll call that my Easter meal.

Have the whole family around this weekend and will do 4 racks of ribs for Sunday (in the PBC).  I'll have to cook them Saturday afternoon, though because Sunday morning will be church services.  My challenge will be to get them just done enough to re-heat well, slowly, Sunday morning in the oven.  Re-heating ribs can be dicey and I hope they don't get overdone and fall apart.  They'll get eaten, anyway  ;D
