I stopped by the grocery store last night with absolutely no idea what I was going to cook for dinner. Turns out it was the last day of an angus top sirloin sale, so I picked up a couple of those.
When I got home I discovered my wife had left a couple of boneless, skinless chicken breasts out, also. So, I used the food saver for one of the steaks, fired up the PBC and set to seasoning - Mo' Rockin' Chicken for the breasts and BBQ-1 Cow Dust for the sirloin.
I used the rack this time and then sat down with the dogs and make a couple of phone calls. Well, I didn't watch the meat, I just assumed it would take a little longer than it did. I got lucky, got the beef off a little warmer than I had hoped, but not too bad - about 145 degrees.
It turns out that it didn't matter. I was hoping to eat with the wife, and she got stuck working late. After having the food left out (foiled), I finally fired up the oven to the lowest setting and kept everything warm in it. I think the beef dried out just a bit.
Still, it turned out pretty good. The wife (and I) really like the Mo' Rockin' Chicken rub. She didn't try the steak, but I thought the Cow Dust was pretty good, too. I even have some leftovers for today.
