How did you get them to look so dark?  is that smoke color or char? High temp? Lots of wood?

The skin wasn't burnt, I used a couple handfuls of mesquite chips. I cook my chicken with the vent open 1/4-1/2 which is the same for anything I cook. I do crack the lid for the last 15 minutes or so to try and crisp the skin up a little

How was the skin at that point? Mine so far has been tough and chewy but I haven't done the lid cracking thing yet and my temps have been lowish for chicken at about 270.

Ive only done two cooks with the PBC so far. The second one i put a handful of wood chips in right at the start and they flared up and sent the PBC to over 400. Anyone else have that happen? Is it bad? Do you think if i waited until the temp went down a little the chips would still give me the smoke or would they all be burned up.
