Ribs for a retirement party.

My wife's boss was retiring after 40 years.  So my wife ask if I could make some ribs and have them to her at work at 10:30 with only a days notice.  Off to Costco.  I woke up at 0430 with Marley to fire up the PBC. 



Come on PBC wake up buddy.



I only use 1/2 my charcoal basket for all my cooks. 



Flame on.



Everything seasoned up and hooked up.



One hour on the cool side 1st.



Then one hour on the fire side for a little more color and some  crust.



Is it coffee break yet?. A nice strong bialetti Italian coffee. 



Two hours into the cook and they look good.



Now they're going to get better.



Temp is perfect.





Took them out of the foil after 1 hour.  Back on the PBC.



I took the foil drippings and added honey to it.  Applied that mixture to the ribs and cooked until a toothpick wouldn't pick up the rib.



These came out super sticky with good color.



One of the director's of her group is a competition bbq judge and said it was an outstanding rib with good flavor and a good bite to them.  Ya.

And the moral of the story is my PBC never lets me down.

bye, bye California !. 10% income tax, new stupid train to go down south and we are sending all are water down south too instead of giving it to the farmers who grow food.  I'm out of here.
