I have been wanting to try this recipe from Len Poli's site. Last time I tried the cellulose casings I had bought they where dried out. They where so brittle that they where breaking every couple of inches. Ended up throwing the whole thing out. Just got my order in from a different supplier and these have a oil film on them and stuffing went very smoothly. Out of 3.5 lbs. of ground beef I managed to get 23 hot dogs, one being the last one in the stuffer and it ended up being the foot long one.
So I did use the liquid smoke on these so no time in the smoker at all. I had two options, one was the hot water bath and the other I could use my dehydrator. I decided to use the dehydrator since for dinner tonight I am going to
SOUS VIDE
two boneless, skinless chicken breast's. They are in the pot as I am typing. That will be another post

So here the hot dogs are coming out of the stuffer
23 made from 3.5 lbs of ground beef
This is at 106 degrees IT, notice how dark they got. Love it
These will come out around 152 IT. The casings should come right off . Should be good on the BBQ.

Dogs are done. finished in the hot water bath after all. Had chicken breast in there and they where done for dinner and I wanted the dogs to get done faster. To nice of a day here to waist watching food cook.
Cooling in the sink with ice cold well water.
All peeled and ready to be vac sealed

Those dogs look great!!! I never would have thought about "cooking" them in the dehydrator. I take it with the casings, they don't really dry out, and you are mainly using that as a convection heater (at least until the water bath became available).

Place the cellulose casings in the fridge, the 10% Humidity will keep them good.

Had these for lunch, remind me to tone down the cayenne pepper next time. These had a good bit to them and the little ones who these where really made for just might find them a bit to hot.
