Title: Sandman's Coffee Brined Bacon

Jul 09 2014

Yesterday when I went to the Beer and Wine depot for some beer Sandman gave me a nice sample of his coffee brined bacon. He had showed it to me the other day just out of the smoker. He used pork butt instead of side meat. I wanted to fry up some when I got home but had things to do so I waited until today.

I cooked a batch of old fashioned yellow grits. I got my Lodge steel skillet out and fried up 3 pieces of the bacon. As it was frying I thought I should have used the bigger skillet and done more! After the bacon was done I fried two eggs in the bacon grease with lid on to self-baste. I served it all up with some buttered toast.

That bacon was sure good; I could tell it was a little different than his normal bacon but can’t really say I could taste the coffee. I reluctantly gave my wife a bite and she said that is good and I can taste the coffee.  Thanks Sandman for the nice sample! It sure was good with the eggs and grits!

Sounds wonderful, unfortunately I'm sitting in a place that has Internet but restricts pictures from displaying.  I cannot see the food porn right now, but will look at it when I get a better Internet feed.  ;)

Muebe, have you tried Cholula hot sauces?   My favorite is their chipotle, followed by the original.   Use BOTTLES and BOTTLES of that stuff.   Not nearly as "vinergary" as Tabasco.

I've tried Cholula many times and it is a good sauce but I'm still loyal to my Tabasco.   ;)

As happens to often, I've probably missed something.  So, y'all made bacon out of the butt rather than the belly?  How y'all do dat? Dee
