Title: Infuser Keta Salmon & Cornbread Stuffing Smashers

Local store had Keta Salmon on sale so I could not pass it up...

Removed the bones and butterflied. Then coated with Big Poppa's desert Gold Seasoning and some Soileau's...

Into the pre-heated Infuser on the gas grill side burner on medium flame. Dropped some Maple pellets in there...

I tell you that low grade Salmon is really good this way. I could not beat the $2.99Lb price ;)

You have done exactly what I think good BBQ is all about. You took an inexpensive cut and turn it into some really great eats.


Look how moist and flaky that salmon looks. I would sit down and eat a plateful of that any time, Muebe! :)

The meat pulled right off the skin and was very moist. I was impressed with the smoke flavor. That little infuser is great for making a quick and easy meal.

Me too. I have a lot of striped bass in the freezer. Might have to try this.

Pick up the Infuser and will do a normal roast chicken tonight.
Any more good idea's for recipes muebe or anyone else?

PS. Forgot to add that Infuser Keta Salmon looks great and as always nice job on the cook and pictorial.

Just perfect and as always MUEBE - you rocked this cook!

Outstanding choice for this preparation! KETA is often times looked down upon by those who consider themselves salmon/fish experts. And that's just fine with me - it's kinda like before pork shoulder, brisket, flat iron and hanger steaks were discovered by all the foodies!  KETA is an excellent fish with good texture, lotsa oil (not as much as the higher priced Kings & Silvers but not that much less either!) The flavor of the fish is very very mild and perfect for those who say they don't like fish cause prepared on the grill it picks up and carries those excellent grilling flavors as the main flavor.  And if you enjoy adding flavor in the form of blackening, rubs, smoke, etc. it's excellent!  MUCH better than the farmed Atlantic salmon...MUCH BETTER!

BTW - if you can buy it whole and frozen it's gonna be nearly as fresh as when it was caught. Oft times the local grocery will put this fish on special and have the whole salmon thawed in the case...ask if they have any still frozen and buy it frozen, have them use their saw to cut it into larger roasts - keeping the head and tail for yourself to use in stocks and soups! A couple 3 roasts from the fish can be had and keep them frozen, cause they are easier to thaw & fillet...trim off the belly section for candy using T's Bacon spices and oh-my-goodness are they good that=a=way.   8)

I have to admit, I'd never heard of keta salmon until I looked it up and found out it was what I know as dog or chum salmon.  Must be the latest marketing move, like when they changed the names of Patagonian toothfish and Chinese gooseberries (now known as Chilean sea bass and kiwi fruit, respectively).

How would you compare the smoke effect of the infuser to say - your pellet grill with an Amazen smoker in it during the cook?

The smoke is very concentrated. You get a lot of smoke flavor in a very short time.

Another home run Mike. When you cook on the side burner is it on low, medium, high? I don't have a side burner and am trying to figure out what I would need to do on my CampChef stove. It has 30k btu burners and most of my cooking on it is low unless I am doing a low boil.

It has been on high. Of course this is only a 8K BTU burner I believe and it is located lower from the grate than a standard range cooktop.

Thanks :) much for the info and I like that you can do the cooks on the side burner and not burn up a ton of gas. 
Maybe that is why my chicken did not come out well.
