Found a 23 oz t-bone in the freezer yesterday! I had already given it a bit of oak smoke, and sous vided it @130 for a few hours. Today it was close to being thawed, so into the hottub @130F until cook time.
Got the cast iron pan screaming hot on my gas one-burner. Made a mistake in putting Weber's Chicago Steak Seasoning on before searing. We love it on steaks but the garlic burns with the intense heat. From now on just salt until tabled! Anyway the steak came out perfect!
Plated with mashed and gravy from sv juices, and a great caprese salad!
A glass of cabernet and a wonderful close to a fine weekend!

Looks fine to me and I would eat in a skinny heartbeat.
Sweetie and I are in unanimous agreement, anytime is a good time for steak. ;D

I'm glad to know you can cook it sous vide then freeze it and bring it out later.
We can cook 3 or 4 at one time and freeze what we don't eat. Deb and I usually split a ribeye and a potato at supper.

Jaxon remember to put in icebath after SV'ing to rapidly drop temp, I then refrigerate a few hours before freezing. To sear frozen SV'ed meat, put in SV set at temp previously cooked, for at least an hour. Unbag, dry and sear.

I just checked my freezer & when I was finished all I found was Nutri-Systems & Freezer burn. ??? ??? ??? No steaks
But that one is big enough to share Hint hint ;) ;) ;)
