Don't you just LOVE the smell of Hickory in the Morning!!! I do ... a few snorts of Hickory and I'm good to go  8)  8)

Lit my MAK 2 Star at 08 hundred hours to preheat to 225ºF so I can smoke an 8 pound Pork Butt for tonight's pulled pork. Going to use my turbo method where I smoke the pork butt at 225ºF for 3 hours before bumping the pit temp to 325ºF. When the IT reaches 160ºF I'll double wrap it in foil and finish cooking the butt till it reaches an IT of 205ºF ... FTC for 3-4 hours ... pull ... enjoy ... No more overnight cooks for me - getting too old for that!!

The smell of hickory is fantastic.  It's really good when you put brandy in the morning coffee.  Pretend your camping.  No rules when your camping.

OH yes!!!!     Sometimes when camping i'll fire up my A-Maze-N tube and let it roll just to get smoke in the air  :D :D :D :D

IT at 160ºF ... ready to be double wrapped in foil and back into the MAK till IT reaches 205ºF ...

Dang that looks good. Which brand of those bands do you use? I read some reviews on Amazon and seems people say the newer ones dont hold up as well.

Been using Architec Stretch Cooking Band for years now. Bought them a few years ago and still using the original ones. After years of use some of them are starting to stretch out and get loose. But at less than $6 for 25 bands I should be replacing them anyway. Good to 600ºF and dishwasher safe.

This is why I choose to foil my MAK 2 Star ... Don't care to have all that nasty gunk baked on my grease pan ... easier for me  to replace some Heavy Duty foil then to scrape off the gunk!!

Ask and ye shall receive  8)  8) ... The 'Money $Shot' !! ... Ate pulled pork sandwiches to our hearts content and seeing as there's only the two of us left at home I vacuum sealed the rest. Now we have 5 large portions of pulled pork for future use   :P  :P
