Looks good Tom as always ;)       Now I want ribs  :D :D :D

I do have a question, did you wash the spud with water after you cut it?   

 Washing it after will remove starch that binds the slices together.  Also I precook mine a few mins in the microwave just to get it cooked faster on the grill

I wash after I make the cuts then nuke it for a few mins just to get it going.   When I wash it I try to make sure each rib has been washed out well.   After I nuke them I add the butter and breadcrumbs or cheese then place in a pan then on the grill

Mine don't stick together anymore. ;)    I also use chop sticks as a guide on how far down to cut.  I place chop sticks on both sides then cut down to where the knife stops then make the next cut...  I'll try to find pictures

Our local grocery always has country-style ribs...boneless and bone-in.  Which is better?

The only time I tried cooking them, they were dry and oversmoked.  After watching this, I'm thinking I need to give 'em another try.  What is the recommended IT  to finish?  Does the potato get a lot of smoke?

Thanks Jaxon, I've done both bone in seem to work better for me, Internal temp around 145 ish. In my opinion the potatoes doesn't really pick up that much smoke.

I learned to soak potatoes from my mother in law..she soaked all her pottoes before frying them and hse made the absolut best fried tater..I even inherited her potato cooking cast iron deep skillet..I recently got an air fryer and had to soak a blooming onion for 2 hours in cold water before cooking it for 15 minutes..the soaking really helps it bloom, works with sweet potatoes too.   .☆´¯`•.¸¸. ི♥ྀ.
