Title: Pulled pork, spatchcocked chicken, collard greens and homemade coleslaw
Post by: Pam Gould on February 18, 2017, 11:40:43 AM
I have been busy today..I spatchcocked a chicken and a pork roast and put in the lil Masterbuilt smoker this morning..with some cheery wood, a lil hickory and some pecans pieces...pork will be done about 9 - 10pm.  I also made up a batch of collard greens with jowl bacon, onion, and gahhlick in the pressure cooker...It just got done and it's fabulous. I also made some homemade coleslaw for the pulled pork for tomorrow, might have a taste tonight..I think I'm ready for about anything.   What Y'all cooking today?
In the middle of all this..there are 10 wild turkeys in my back yard..I wanna cook one..just 1.  .☆´¯`•.¸¸. ི♥ྀ.

Here turkey turkey.

I'm not sure who their natural preditor is, but I have never seen more wild turkeys then in the past couple of years.

Great color on that chicken Pam!

Better the Turkeys than the pack of Coyotes that are next to my yard. They really have been brave lately

Nice looking bird! But how did you get a crispy looking bird out of a electric smoker? I've done hundreds and hundreds of leg quarters in electric smoker but have never looked that good.

Well..bird was about 4 hours, about half the time with smoke..225º. I spatchcocked it then rubbed with light olive oil then seasoned with s&p gahhlick and some Kick'n chicken..I had to put it on the top shelf because butt was too big for it, but didn't want grease to drip on pig so I put it on a 1/4 sheet pan on a rack, turned it the long ways..worked great in MB, wouldn't fit the long way.. had smoke rolling with a water pan too..Love my 1/4 sheet pans and let her rip. The door is not insulated and it's curved outward so the pan fit right in it...wonderful. Hubby and Maci were happy, served with white cheddar mashed potatoes, green beans, bread & butter and collards for me, they don't like them. Lotsa chicken left, hubby is dieting so gonna make some chicken salad tomorrow..Really likeing the small MB, easy for this old girl to handle.
I just got the pork out of the smoker, 13 hours and pulled at 205º..had good cookes all day, wrapped for a while the pull tomorrow, bone fell out, I like that.

Now that the snow is melting I can finally see my bbq. I can make a nice smoked chicken like yours. Looks great.
We have a rafter of Turkeys living by us. Our neighbor across the road has shot about 3 Turkeys out his kitchen window. How he gets away with it I don't know, because the game warden lives 3 doors down.
