I'm originally from North Texas and have been smoking for years.  Still a Cowboys fan, hope that doesn't break any rules :D  I've been researching and plan on getting a PBC.  I've read quite a bit how it is set it and forget it, that will help with having young kids, but have heard other opinions.  I hope to learn and contribute to the community.   Thanks for having me!

Welcome from O HI O. Read thru the PBC section and you will learn a lot. I have the thermoworks SMOKE and have found that some times when I load the PBC up my temps will drop and I have to crack lid to get temps back up. I like to no what my pit temp is at all times. They say set and forget but I bought mine a few months ago so all my cooks have been in cold weather and I'm sure it will be different when it warms up.
