Title: My first SNS cook

So I got to really use the new toy Tuesday for some baby backs.  Lit 15 semi used coals and then When good and ashed  over I topped it off with a mix of good used and new KBB.

The ribs were dry brined overnight and then rubbed with a modified Jan's rub and some Bad Byron's(https://uploads.tapatalk-cdn.com/20170504/45dc0632c5938887f651157f06ba3419.jpg)
I was pressed for time and needed to go around 260-265 to speed things up and man did she lock right in. Used a couple pcs of pecan and a couple of apple. Here they are at about 2 hours (https://uploads.tapatalk-cdn.com/20170504/f3630ebd5361ec2cdb6548e568a076b8.jpg)
I did wrap at about 3:15 for an hour and fifteen minutes then glazed with some homemade apple butter BBQ sauce and let set for 20 or so. She likes a lil more tender so I went for close to fall off the bone and I pretty much got that.  Here's a pic with some sharp cheddar cheese and mac.  (https://uploads.tapatalk-cdn.com/20170504/35e5ceec200ca7672f46f0e54ab99f45.jpg)

Glad to hear you had a great first cook!  That shadow in the last photo looks a bit ominous, though.  ;D ;D

Thanks!! And if you mean check into as in "I need to send a check to abc for an SNS" then yes, you're correct! Love it already 3 uses in!
