Hey all ,
I'm a newbie to charcoal BBQ , just here to soak in some info and knowledge . I am a big fan of southern BBQ since my wife Is from Kansas and Lord knows Kc BBQ is darn good! I have had a lil electric smoker from Bass pro for a year and now that it has quit I am ready to step up my game to charcoal. Just bought a used Broil King offset smoker and am gonna try to make the biggest brisket I can find for the weekend. Looking forward to learning from Y'all .

a little tip on the Broil King offset: do not burn wood splits in it. The metal is to thin and you will warp the ash pan and burn all the paint off of the fire-box.
It was designed for hard-wood lump and wood chunks.................
