Title: Steak n Potatoes

OK, so a good quick n easy dinner for me and my wife is a nice grilled ribeye, a baked potato, and a salad or veggie on the side.

Usually I fire up the gas grill and put a couple potatoes on to bake while the grill heats. I lightly oil, salt and pepper the potatoes, and pierce with a fork.

After about 35 minutes in the grill with the hood down (about 5-600°) the potatoes are close to done and have a nice crusty skin.

I move the potatoes slightly to the side and throw the steak on the hot side of the grill. And grill the steaks for about 5 minutes per side with the hood open.

By now both the steak and potatoes are done -- but the potatoes no longer have that nice crusty skin. But soft and slightly damp/soggy shin.

Any hints for keeping a nice crusty baked potato skin?  I've thought I might try an upside down steel bowl over the potatoes to act like having the hood down....

Do you have an air fryer......Wendy does our taters in one and the skin is nice and crispy......

I just saw this the other day on Cooks County.

1. Adjust oven rack to middle position and heat oven to 450 degrees. Dissolve 2 tablespoons salt in 1/2 cup water in large bowl. Place potatoes in bowl and toss so exteriors of potatoes are evenly moistened. Transfer potatoes to wire rack set in rimmed baking sheet and bake until center of largest potato registers 205 degrees, 45 minutes to 1 hour.

2. Remove potatoes from oven and brush tops and sides with oil. Return potatoes to oven and continue to bake for 10 minutes.

3. Remove potatoes from oven and, using paring knife, make 2 slits, forming X, in each potato. Using clean dish towel, hold ends and squeeze slightly to push flesh up and out. Season with salt and pepper to taste. Serve immediately.

They said never use butter on the skin, because of moister. Then cut open right away, then you can use butter on the inside.
You could just use the same recipe on your grill.
