Made this Sunday night, fried chicken (almond flour and Parmesan cheese) with what was to be cheese garlick bread. I did pay attention and added to much coconut flour and the bread turned out like a soft cake like corn bread. Well, lession learned and a new bread for the recipe book ;)

Here is the basic bread recipe. IT CAME FROM http://www.healthline.com/nutrition/101-healthy-low-carb-recipes#section3
1 1/4 C almond flour
1 T coconut flour
3 egg whites, beaten until fluffy
2 T olive oil or avocado oil
1/4 C warm water
1 tsp. live yeast granules
1 tsp. coconut sugar (or honey or molasses– will be eaten by yeast)
1/2 C shredded mozzarella cheese
1/4 tsp. salt
2 tsp. baking powder
1/4 tsp. garlic powder
1/2 tsp. xanthan or guar gum (optional)
Topping
1 C shredded mozzarella cheese
2 T butter, melted
1/4 tsp. garlic powder Place in 9x9 glass dish coated with Pam sprayand bake for 15 min (on 400) or until golden brown then add the topping
and bake for another 5 mins
1/4 tsp. salt Then add toppings and put oven on broil to brown up cheese/toppings
1/2 tsp. Italian seasoning
Now inorder to make the Faux corn bread, use 1 cup of cocnut flour instead of 1 T, add about 3/4 of heavy whippping cream and add an another 1/4 cup of water and bake with same directions

Recipe for the coating is 50/50 Almond flour and Parmesan graded cheese (I prefer Kraft) add 1T of dried parsley flakes to mix and salt to taste.
I use egg wash as the glue for frying but for an air fryer I might use a good oil. I also do these on the grill and use oil when grilling these

Have you tried using unflavored pork rinds ground into a flour as part of a coating base? I keep saying I want to give that a try but have not gotten around to it yet. I'm thinking a mix of the 0 carb pork rind "flour" mixed with almond or coconut flour and seasonings. I was just wondering if you had tried anything along these lines before as a coating for fried foods.

Yes, works really good but you have to get them ground just right.

Yes, works really good but you have to get them ground just right.
