  No one mentioned the Tommy Ring. Go get a cheesecake springboard pan and put the ring only in the bottom of the big easy.
There is a 2 inch space at the bottom where food doesn't cook as fast as the rest. Set your basket on the ring and you eliminate that dead area. If you want a little smoke flavor, add some wood chips or pellets between the ring and the body of the big easy before you start cooking. You are going to love a Turkey cooked in there.
I feel so ashamed  :(  how could I over look that??   But then again I was not looking to help him mod but just to get the first cook in under his belt

Looks good, but boy that chamber needs seasoning.   I guess you just need to cook more  :D :D :D

The chicken and potatoes came out great.  Both were very tasty. 

As for the seasoning.  I actually seasoned it twice before using it.  But only use will get it seasoned properly.

For the next few cooks, wipe the chamber down with oil after you finish.  I did this and it really seasoned nice.

I used canola oil not PAM spray like some did years ago

I don't consider the T Ring a mod anymore. Its necessary equipment. !  Should come with it....
