Sirloin, Taters, and Popover

Got a nice 3 pound hunk of sirloin from my butcher. $6.99 a pound.....I can live with that.  Gave it a long sear in a pan, and into a 200 degree oven until 132 IT.

Made a new potato/corn dish that has now been deleted from my recipe box. Not a winner.

Made some great Popovers with some bacon fat I had.

And since I was treating this like a roast beef, and since I want to grow up to be Hub......I made gravy.

The sirloin was some of the best I have ever had.

No charcoal or wood was harmed in this cook.???
