The Big Easy Smoker Roaster Grill / First Cook

Hello all,  Received my new SRG yesterday assembled okay, seasoned it and here is the first cook of Chicken Legs, amazing how fast this thing cooks! Will be doing more cooks and posting as time goes on feel fee to comment or ask questions as always, "Thanks for watching!"  :)

First off congrats on the new cooker.   

The legs look wonderful and yes they cook pretty fast in infrared.

I do have a question though, why a thermometer?  Infrared does the cooking in this unit not heat, so you just interested in the temp?

Not trying to be picky by any means, it's just you can cook the same meat lid up and it would still cook very well.

The original Big Easy has a mesh lid the let heat out so the food wont dry out from heat.  This is also reason why I cut a four in vent into the top of my SRG's to vent the heat yet let the infrared do it's thing

Also remember the temp at the lid is not the temp in the chamber so keep this in mind.     

Again not knocking you just wondering, it's my nature.... ;)

Thanks for the kind words, I guess I m just paranoid about temp so I mounted a cheap probe on the lid just as a guide. It does assist me in knowing when it's cooled down enough to put the cover on.  I did see your modifications to the lid and will most likely do the same but will use an lid vent from a Webber kettle grill. I'm just a rookie on this thing so any advice will be helpful. Thanks
