High speed beef ribs?

Anyone ever cook beef short ribs in 2.5hrs?, I just finished 2 racks, was just gonna check them and maybe flip them in the rib rack but I stuck the thermoprobe in and as some say..like butta, both were like that, pulled em off and wrapped, tasted about 30min later and were the juiciest I've had, just curious, all we here is 3-2-1, etc. temp was 275-300 on a weber with the baskets and a water pan.

I have cooked them in 2.5 hours and also it has taken much longer. A lot depends on the meat itself, plus the cooker temp, weather, etc. I only use the 3-2-1 method with pork ribs. And that again depends on the meat. Sometimes I will go 2-1-1 and they are done. The 3-2-1 methods and the suggested time tables are just that: suggested. It comes down to when it's done it's done.  ;)

Temp. is only a guideline. How do the flex? I poke 'em with a thinly gloved finger. ( They get a little scared but I assure them I am medically qualified...to eat them! :D :D :D )

Higher temps and a water pan probably did the trick..........this time.....next racks you do might take longer....ya just don't know...........

How was the marbling?
Well marbled shorties cook faster than lean shorties.

3-2-1 is commonly referred to the method of cooking pork ribs. Beef ribs are a whole different animal... Literally.

I cook my pork ribs at 265F and beef closer to 300F.

Pork ribs are 2-1-1 usually for me and beef ribs are done when they are done :)
