Sunday's dinner was started on Saturday, as I combined cayenne, blk. pepper, paprika, ginger, tumeric, and cinnamon. Half of this concoction was tossed on 4 chicken legs and 4 thighs, then refrigerated. I really like using this tagine I bought in the closing days of Chef's. It makes for a great meal on a Sunday, slowly doing it's magic during a long cook.
But as we all know....sometimes the best laid plans fizzle! Plan B would have to do....on Monday!
So after work, I got to preparing this meal courtesy of
www.cooksister.comOnions were sauteed in oil using the other half of the spice concoction along with garlic, then placed in tagine. Next the spiced chicken pcs. got browned in oil, they too got placed in the tagine. Then tomato juice, tomatoes, raisins, preserved lemon, blanched almonds, saffron, chicken broth, and honey. The aroma of this baking in the oven was intoxicating!
Awesome flavors and will definitely make this again!
