Hi All,

A quick intro!  I've been smoking meats for five or six years...although I grew up with my dad smoking whole hogs in the back yard.  The BBQ bug bit me and I started smoking with a couple of ceramic planters and an element!  I moved to a masterbuilt propane and then to a masterbuilt electric smoker that I use now.  I've churned out some decent Q but I really think I could up my game a bit with some advice.  I'm also looking to buy a pellet cooker, most probably a rec tec mini.

Welcome from middle Georgia.  Depending on your location in SC, you could be pretty close to us - we're just south of Macon on I-75.
I don't think I'll be much help to you if you're trying to take another step up, because I'd have to take several leaps to catch up to your level.  Howsomever, I'm looking forward to hearing from you here.

So - don't be bashful. We need comments, suggestions, tips - and questions, so that we all continue to learn.

And...have fun. We all have a sense of humor here, and there is no "one right way" for anything. That adds flexibility so you can use several methods on different cookers with predictable results. Most have several kinds of cookers, and we have no prejudices against any.
