Grits & Shrimp Creole
« Reply #-1 on: October 23, 2016, 12:29:47 PM »
Oct 23 2016

Another inside cook on my new range. I cooked up some stone ground grits and made up the Creole sauce to cook the shrimp in. I had 10 oz. of nice jumbo gulf shrimp to use; just enough for the wife and me.

The sauce was:
1 15 oz. can of crushed tomatoes
A couple slices of sweet onion chopped
½ green pepper chopped
½ cup celery sliced
2 green onions sliced
1 tablespoon Worcestershire
1 teaspoon Old Bay seasoning
1 teaspoon garlic powder
Fresh parsley chopped
Salt and pepper to taste
Hot sauce to taste

I was out of Worcestershire so had to skip that. I got my grits on cooking and started the sauce. I started with sautéing the onions, then added the peppers and celery, then the green onions and then the crushed tomatoes. I added in the parsley and seasoning and let it simmer while I finished the grits. I like them thick.

When the grits were done I set them on the warmer burner and cooked the shrimp in the sauce. I did them for 6 minutes turning half way. Tasted good, but missed having bread and butter with them!

The grits were on the warmer until after we ate. When I emptied out the pan they were not stuck to the bottom. I am going to like the warmer for grits if nothing else.

Beautiful sauce-- super vibrant color!   Always a fan of shrimp and grits.  Nice to have those extra new features on the new stove!

I'm afraid you didn't make enough for everyone.  Looks mighty good.  Love grits with shrimp, what ever way you fix the shrimp.

Don so You can have them for breakfast or dinner? Are they made the same way for both or is one made sweet & the other not? Can you have them with eggs? Sorry for all the questions

Yes you fix them the same way. There are white grits and yellow grits. I like the white for breakfast and the yellow for dinner with different toppings. There are Stone ground coarse grits, my favorite, but take about 20 minutes to cook with lots of stirring. A good recipe is 3 cups water, Tbs. salt, half to one stick of butter and one cup grits. Boil water and add the grist slow while stirring, turn heat to low and keep stirring. Stir until they get as thick as you want. I like them so a spoon will stand in them. This makes plenty for 4.

Then there are instant grits that cook in 5 minutes. You might want to try them first to see if you like them I love them with bacon and eggs; top them with a good pat of butter and salt to taste. If you have any more questions just PM me and I will answer! Don

Sorry it is the Quaker Quick Grits that cook in 5 minutes. The instant cook in 1 minute in a microwave and aren't very good! I have ate them in a pinch! Don

Nice!  Have always loved shrimp and grits in cream sauce.  This creole spin with tomatoes is very interesting.  I bet my mom would go for this.  I can't wait to tell her about it.
