This is one of our favorite pasta dishes and with the Zucchini pasta it was abso-freaking-lutely delicious, and super low carb to boot!
Zucchini Pasta with Sautéed Shrimp, Tomato, Onion & Olives in Olive Oil, seasoned with a little fresh garlic, salt, pepper. I was very happy after this meal!
The recipe is not complicated at all. Just heat up about 1/2 cup of olive oil, toss in some fresh garlic & onion followed by some pre-cooked shrimp, black or Calamota olives and some chopped tomato. Season to taste with salt & pepper. Serve over top regular pasta or steamed Zucchini pasta.
